EASY AND DELICIOUS FRUITCAKE COOKIES

Cream:
1/2 cup shortening
1 cup sugar

Add:
1 egg, beaten

Sift together, then add alternately with applesauce
to the above mixture:
2 cups sifted flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
dash of ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder

1 cup thick unsweetened applesauce

Add:
1-2 teaspoon(s) vanilla extract
large tub (16 oz.) of fruitcake fruit
1/4-1/2 cup raisins
1/2 cup chopped dates
1 cup chopped nuts (I prefer pecans)

Preheat oven to 375-degrees. Drop from a heaping tablespoon onto greased cookie sheet, then bake for 15
minutes. Cool on a wire rack.

Makes approximately 3 dozen delicious cookies!


BANANA OATMEAL COOKIES

Sift together and set aside:
1 1/2 cups all-purpose sifted flour (I prefer unbleached)
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Cream:
3/4 cup shortening
1 cup sugar

Add to shortening and sugar; cream well:
1 egg (beaten well)
Then add and cream, blending well:
1 cup mashed ripe bananas (the more ripe the
better!)

Add sifted dry ingredients to creamed mixture,
then mix until smooth.

Add to total mixture and mix thoroughly:
1 3/4 cups quick oatmeal
1 teaspoon vanilla
1/2 chopped pecans

Preheat oven to 350-degrees. Lightly grease cookie sheet. Drop by heaping Tablespoonfuls onto baking
sheet, 2 inches apart. Bake 10-12 minutes. Remove from sheet immediately and cool on wire rack.

Makes approximately 3 dozen scrumptious treats!


CHERRY DROP COOKIES

Cream:
1/2 butter or margarine
1 package (3 oz.) cream cheese, softened

Add, beating until light and fluffy:
1 cup sugar

Add one at a time, beating ell after each addition:
2 eggs,

Stir in flavorings:
1 teaspoon vanilla extract
1 teaspoon almond extract

Combine dry ingredients in a separate medium
mixing bowl, then gradually add to creamed
mixture:
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Stir in:
1 can (8 1/2 oz.) crushed pineapple, drained well
1/2 cup chopped red maraschino cherries
1 cup chopped pecans (optional)

Preheat oven to 375-degrees. Drop by heaping Tablespoonfuls onto ungreased baking sheet, 2 inches apart.
Bake 12 minutes. Remove from sheet immediately and cool on wire rack.

Makes approximately 4 dozen memory-making, holiday-perfect cookies!
